  中新网兰州9月9日电 (何乐 王瑷萍)以“香而不辣”著称的甘肃天水市甘谷辣椒,近日迎来丰收季。用这一本地特色食材制成的辣椒酱,已成为深植于甘谷人记忆中的家乡味道。入秋后,家家户户开启辣椒酱制作,浓郁香气弥漫在整个村庄,既唤醒了人们的味蕾,也承载着最质朴的乡愁。

  在甘谷县八里湾镇城峪沟村,村民蒋璨正与奶奶一同在院子里忙碌地准备制作辣椒酱。经过精心挑选和清洗的甘谷辣椒红润透亮、色泽饱满,在晾晒至半干微软后,便进入下一道工序。蒋璨介绍说:“洗辣椒时千万不能去掉辣椒把,否则水分过多会导致晾晒过程中变质,影响最终风味。”

  地道的甘谷辣椒酱,离不开品种为“七寸红”的辣椒。这种辣椒皮厚肉多、香而不辣,层次丰富的香气区别于一般辣椒的强烈刺激,成为辣椒酱的“灵魂”。蒋璨一边切辣椒一边介绍说:“除了主料‘七寸红’,我们还会加入生姜提鲜,老干妈、豆豉以及炒熟的芝麻、花生碎、瓜子仁等。喜欢荤味的也可以添加牛肉或鸡肉。”

  选料是基础,炒制则是升华——这一步最关键的是火候与调料顺序的把握。蒋璨将切好的辣椒碎倒入油锅中,以小火慢熬,待水汽逐渐蒸发、香气四溢时,再依次加入生姜、老干妈、豆豉和坚果碎等配料。每加入一样,都需充分翻炒,使味道层层融合。“一定要小火慢熬,按顺序放料,这关系到成品的颜色和口感。”她强调。

  经过约一小时的熬制,红亮浓稠的辣椒酱终于出锅。搭配软糯的馍馍,瞬间勾起无限回味。这小小一勺辣酱,不仅是餐桌美味,更串联起八里湾镇兴盛的辣椒产业。近年来,该镇大力推动辣椒种植与加工,使其成为民众增收的“致富果”。

  “今年全镇在多个村子共种植辣椒4500亩,亩产超4000斤。”八里湾镇党委委员、副镇长魏爱平表示,甘谷辣椒品质优良,是制作辣椒酱的优质原料。丰收季节,几乎家家户户都会制作辣酱,馈赠亲友或寄往远方。一瓶辣椒酱,是家乡的味道,更是甘谷人对这片土地的深情眷恋。

  如今,甘谷辣椒酱正带着家乡的温度销往各地。它不仅是走亲访友的伴手礼,更是连接甘谷人与故乡的“味觉纽带”,让每一口都蕴含乡愁,传递对土地的热爱。(完)
