关于进餐顺序影响健康的理念很早就有人提出了,提倡在用餐时采用“膳食纤维-蛋白质/脂肪-碳水化合物”的顺序。具体到特定的人群,进食顺序亦有细微差别,以下来看一看吧。
超重人群和糖友 应当先吃占每顿食量一半的蔬菜,然后再吃肉类、蛋类等,最后吃富含碳水化合物的主食。蔬菜含有大量膳食纤维,能量密度较低,而且需要细嚼慢咽,这样更能增强饱腹感,有助于控制食欲,避免吃更多的碳水化合物。
肠胃不好的人 应先吃容易消化的食物,尽量增加咀嚼次数,降低胃肠负担,使食物得到充分消化。不建议餐后马上吃水果,因为多种食物在胃内会影响水果中糖分的吸收利用,可能导致糖类在胃内混合发酵,产生有害物质和胀气。
高龄老年人 建议遵循“少量清汤、蔬菜、主食、荤菜”的顺序。餐前喝适量清汤可以把胃“唤醒”,再吃些比较清淡的蔬菜、豆制品等富含膳食纤维的食物,能延缓空腹时间。肉、蛋营养丰富,但是要适量,且优先选择富含欧米伽3多不饱和脂肪酸的鱼和虾等。
传统的一日三餐,基本都是素菜、荤菜和主食同时进行,不太可能像试验研究中那样做到绝对的“素菜-荤菜-主食”的顺序,但是我们可以尽量地优化。以我个人为例,平时上班吃饭比较简单,一般先吃一碗清淡的素菜(有时候也会喝一小碗清汤),留少许青菜和荤菜,最后配合米饭慢慢吃。水果多放在餐前或两餐之间吃,这样很容易就坚持下来了。
