中新网北京7月19日电 (记者 阮煜琳)中国烹饪协会会长杨柳日前在北京召开的“2025餐饮业食品安全创新实践产业链高质量发展推进会”上表示,在各级政府政策加持、各主管部门的科学引领下,我国餐饮业食品安全态势持续向好,企业落实食品安全主体责任意识不断增强。
近年餐饮业增速保持领先,2024年全国餐饮收入高达55718亿元,同比增长5.3%,随着市场规模稳步扩大,消费需求更趋于个性化、多样化、品质化,而餐饮业营养化转型已成为大众广泛关注的议题。无论是健康烹饪模式的普及,还是营养均衡理念的推广,都在潜移默化的改变着消费者的饮食习惯,消费者对健康饮食和极致性价比的追求也为餐饮行业带来更多挑战。
联合利华饮食策划从儿童膳食营养状况出发,通过食材、调味以及烹饪技巧的科学搭配,改善学生餐食物营养元素摄入不均衡的问题。

杨柳表示,随着数智化手段的广泛应用,上下游产业链协同发展,餐饮业不断加强连锁化、标准化程度,有效降低了食品安全的过程风险。近年来,食品安全“四个最严”要求深入人心,餐饮业对标准化重要性的认识日渐提高,对法规标准体系建设日益健全,企业主体责任意识显著增强,社会共治格局初步形成。然而,相比其它领域,餐饮业具有业态复杂多样、食品安全链条冗长、管控要求较高的特点,这对餐饮业的全链条、精细化、动态化管理提出了更高要求。
“受健康餐饮浪潮的影响,以低热量、低脂肪、高纤维、营养均衡等新兴热门品类不断涌现,像贵州酸汤因低热量、天然发酵契合健康需求,蒸排骨因健康化与快餐化的创新特色,受到不少消费者尤其是年轻消费者的青睐”,联合利华饮食策划北亚区食品研究发展部总监孙丽娜表示,“在营养健康方面,我们不仅关注‘吃什么’,更关注‘为什么吃’”。(完)
